Easy 5 ingredient chilli


This is a super simple basic Mexican style chilli sin carne with lots of ideas of how you can pimp it out and take it to the next level.

Takes 20 minutes

Serves 4

Ingredients
 

  • 3 cans mixed beans
  • 2 cans chopped tomatoes
  • 1 leek
  • 2 yellow peppers
  • 1 tsp chilli powder

Optional Extras

  • Tortilla chips (handful per plate)Avocado (finely sliced)Cooked Vegan sausageHerbs (finely chopped including the stalk)Pickled red onion/gurkans/sauerkrautPickled jalapeñosLime wedges (quartered)

Instructions
 

  • Drain and rinse the mixed beans. Finely chop the full of the leek.Put your instant pot on saute function for 2 minutes
  • Depending on your model it may preheat or not. Add the leek and yellow peppers along with a pinch of salt and saute for 3-5 minutes stirring regularly. Add the tinned tomatoes and the mixed beans along with the chilli powder.
  • Season with 1 teaspoon of salt and half a teaspoon of black pepper. Put the lid on and seal it. Press the pressure cook function on your instant pot and put it on for 10 minutes.  While it is cooking you can prep any of the ingredients you are using to pimp it out.
  • Once the 10 minutes pressure cooking is finished, release the steam. Taste and season with salt and black pepper. Pimp out and serve your dish with any of the optional extras to take your 5 ingredient chilli to the next level.
