Coconut CurryWe love a good curry and we were feeling very inspired by shooting with our friend Santan so we decided to cook one of Dave’s favourites, a coconut curry. This is a super easy family pleasing dinner. Let us know what you think if you try it.

It’s so delicious and extra satisfying knowing you can make it yourself and you can control what’s going into your body.
One Pot Wonder: LasagneThis is literally a one pot lasagna, no oven needed. We cook the lasagne by soaking the sheets in boiling water while making the tomato sauce and then top it all off with a cashew cheese. We think it is epic, super original and we found it to be a real breakthrough!! Really well worth making.
One Pot Wonder: RisottoCheck out our recipe video for delicious risotto, this is so cheap and super easy to make we bought all the ingredients in SuperValu and cost us less that €4!!!!
One Pot Wonder: Creamy Tomato PastaHere’s a super cheap, extremely easy and unbelievably tasty one pot creamy tomato pasta. This is a great one to have up your sleeve when you’re trying to think of an easy dinner to cook in the evening. Even better is that you’ll only have one pot to clean afterwards too!
One Pot Wonder: RatatouilleRatatouille is a delicious belly warmer with a name fancy enough to impress anyone you cook for. This one cooks itself, once you have everything in the pan Mr. Oven does the rest.

Epic Cottage PieWhen we think of the food we used to love when we were growing up, one dish that ALWAYS springs to mind is our mum’s hearty Cottage Pie!!???????? Here’s our take on the old Irish classic: we top a rich super tasty lentil mix with mashed sweet potato and drizzle with a simple coriander pesto – delicious. The coriander pesto sets this dish alight and it presents really well drizzled on top before serving. Serve with a simple green salad.
Gluten-Free, Dairy-Free LasagnaThis vegan lasagne is our ABSOLUTE FAVOURITE recipe from our new book!! It’s so delicious and hearty, we haven’t been able to find a single person that doesn’t like it yet! A real crowd pleaser.

Vegan KormaThis Vegan Korma is so easy to make, it can be done in 5 minutes but you can let it stew more to let the veg really soak up the flavours if you have the time. Did you know a traditional Korma takes 2 and a half hours to make? Sorry we don’t have a written recipe for this! Brussels Sprouts X3 WaysBrussels Sprouts can always be hit or miss when it comes to Christmas, this is an easy way to guarantee that your whole family will eat their sprouts this christmas!! Note: The Brussels Sprouts Crisps in particular are a real game changer!!
Coconut YoghurtThis Coconut yoghurt is incredibly rich and creamy and is FULL of probiotics which keep your digestive tract happy and healthy. A really satisfying dairy-free alternative to regular yogurt, coconut yogurt goes beautifully with porridge or when accompanying a big, chunky slice of chocolate cake/ apple crumble! 😀
Vegan Mac & CheeseWe teamed up with the amazing Rose of Cheap Lazy Vegan to make her Vegan Mac and Cheese recipe! We’re Mac and Cheese virgins so it was interesting to learn how to make, and now this is definitely one we want to try with our kids.
5 Minute Basil PestoWe went super out there with this one, basil pesto pasta in 5 minutes means we substituted out whole wheat pasta for wholewheat noodles to keep the time down. This dish is so easy and tasty it’s a must try!!
