Here, we charred some sweetcorn to give it extra flavour and bite, and made it into a lovely salsa with black beans. Along with some avocado and vegan cheese, it’s turned into this delicious Mexican snack!Vegan QuicheDuring the summer sometimes you can be at a loss for what to eat, the warm weather makes some of the heartier dishes to hot and heavy to eat. This vegan quiche is the perfect alternative, it’s light and fluffy and can be filled with any watery veg you want. It’s so easy to make and it stays together great so it’s perfect for a lunch box.Vegan Spring LasagneThis lasagne is a really nice take on a classic dish. It’s wholesome and creamy with light notes of lemon and mint that take it to the next level. We made a vegan white sauce from scratch and added some tasty spring veg to pack it with nutritional value!Vegan Burrito BurgerWe’ve an amazing vegan burrito burger for you try. This is a super substantial burger that forms well and is packed with flavour. We also make a salsa and guac to add an extra punch.
