Here are 3 of my go to dinners for those hectic evenings. Proof that eating healthy is as quick and accessible as it is delicious.

INGREDIENTS

Toasted Falafel Pitta:

  • Falafels
  • Pittas
  • Hummus of choice
  • Kimchi
  • Spinach

Asian Style Tempeh with Ginger&Sesame Sauce:

  • Wholemeal Couscous
  • Salt
  • Turmeric
  • Oil
  • Tempeh
  • Ginger
  • Garlic
  • Tamari
  • Sesame oil
  • Maple syrup
  • Sesame seeds
  • Baby spinach
  • Kimchi

Mushroom&Tomato Pasta:

  • Wholemeal spaghetti
  • Salt
  • Oil
  • Red onion
  • Garlic
  • Mushrooms
  • Courgette
  • Tamari
  • Basil
  • Cherry tomatoes
  • Passata
  • Maple syrup
  • Green lentils

INSTRUCTIONS

Toasted Falafel Pitta:

  • Toast your falafels and pittas. If you’re cooking for a larger group, toast them in a grill
  • Serve with hummus, spinach and kimchi

Asian Style Tempeh with Ginger&Sesame Sauce:

  • Cook your couscous along with a pinch of salt, tsp of turmeric and a drop of oil
  • Add a tbsp of oil to a pan on a high heat
  • Once heated, add a finely copped thumb-sized piece of ginger and 2 cloves of finely chopped garlic
  • Cut 200g tempeh into thin cubes and add to pan
  • For your dressing, mix together 3 tbsp of tamari, 1 tbsp sesame oil, 1 tbsp of maple syrup and add to pan along with some sesame seeds
  • Add some water from the same cup you made the dressing
  • Mix in 100g of baby spinach
  • Serve in a bowl with couscous and kimchi

Mushroom&Tomato Pasta:

  • Boil some water and break in the spaghetti, adding some salt and oil
  • Add some oil to a pan on a high heat
  • Finely chop 1 red onion and 2 cloves of garlic, add to pan and mix
  • Roughly chop 150g mushrooms and add to pan
  • Finely chop 1 courgette
  • Pour in 1 1/2 tbsp of tamari to the pan
  • Add in the courgette along with a pinch of salt
  • Loosely chop a small bunch of basil and 4 cherry tomatoes
  • Pour in 1 jar (680g) of passata and 1 tbsp of maple syrup
  • Add in one can of drained and rinsed green lentils and 1 tsp of salt
  • Add the basil and cherry tomatoes on top of the sauce and serve with the spaghetti
