Cooking a delicious meal doesn’t have to be difficult or expensive, using accessible ingredients and some super savvy shopping tips we’ve created this lovely recipe perfect for every level of chef.


  • Oil
  • 1 medium onion
  • 1/2 a thumb sized piece of ginger
  • 1/2 a red chilli
  • 1 can beans
  • 1 can chopped tomatoes
  • 1 can coconut milk
  • 3 tbsp tamari
  • 2 tbsp curry powder
  • 1 level tsp black pepper
  • juice of 1/2 a lemon
  • 5 tbsp water
  • Handful of chives
  • Pitta bread to serve


  • Add 1 1/2 tbsp of oil to a pan on a high heat
  • Finely chop your onion, garlic, chilli and ginger and fry on a high heat for 2 minutes, stirring regularly
  • Drain and rinse your beans
  • Pour in the coconut milk and chopped tomatoes
  • Add the tamari, curry powder and ground black pepper
  • Squeeze in the lemon and add the beans and water
  • Let your curry boil and reduce so the sauce can thicken for about 8 minutes
  • Finely chop the chives and add them in 
  • Serve with the pittas
