Cooking for yourself when you go to college can be daunting, this recipe is a super simple and really cheap one to have handy. It tastes even better the next day and it’ll last in the fridge for 3-4 days.


  • 1-2 tbsp oil
  • 2 tins cannelloni beans
  • 1 red onion
  • 2 cloves of garlic
  • 1 green chilli
  • 1 red pepper
  • 1x326g tin of sweetcorn
  • 2 heaped tsp ground cumin
  • pinch of black pepper
  • 1/2 tsp smoked paprika
  • 1 1/2 tsp salt
  • 2 tins of chopped tomatoes
  • 4 tbsp tomato puree
  • 1 1/2 tbsp maple syrup
  • juice of 1 lime
  • small bunch of coriander


  • Add the oil to a pan on a high heat
  • Drain and rinse your beans
  • Finely chop your onion, garlic, chilli and red pepper
  • Once pan is heated at the onion and garlic. Add the chilli and pepper
  • Drain and rinse the sweetcorn and then add to pan to char
  • Add the cumin, black pepper, smoked paprika and salt
  • Pour in the chopped tomatoes, tomato puree, beans, maple syrup and maple syrup
  • Finely chop and add the coriander
  • Taste and adjust seasonings to your own likings!
