Being vegan while studying doesn’t have to be expensive or hard. This easy pasta dish is the PERFECT example of this. You don’t need a lot of ingredients to have a dinner BURSTING with flavour!!!

INGREDIENTS

  • 500g wholewheat pasta
  • Salt
  • 3 cloves of garlic
  • 1 red onion
  • Olive oil
  • 1 red chilli
  • 1 courgette
  • 1 red pepper
  • 20 cherry tomatoes
  • 40g of basil
  • Olives, flaked almonds, nutritional yeast and chilli flakes to pimp it out

INSTRUCTIONS

  • Cook the pasta according to instructions on the packet
  • Chop up all your veg
  • With a pan on a high heat, add in 2 tbsp olive oil
  • Once heated add the garlic, onion and chilli. Cook for 2 minutes
  • Add in your courgette, pepper and basil stalks along with a good pinch of salt. Cook for 2 mins
  • Next, add in the cherry tomatoes and another generous pinch of salt
  • Put on the lid of the pan so that the moisture doesn’t evaporate and cook until pasta is ready
  • Add the pasta into the pan along with most of the pasta water
  • Mix in the basil leaves
  • Pimp out with our suggestions or whatever you have lying around!
