Here’s our take on a one pot goulash recipe, thanks for watching our last one pot wonder video, we’re hoping to continue this on as a series. This one is a hearty full meal. Goulash is a dinner perfect for rounding off a hard day’s work, it’s comforting and delicious. Let us know what you’d like us to try as part of our one pot wonder series.


  • 1 large onion
  • 3 cloves garlic
  • 1 carrot
  • 1 red pepper
  • 1 yellow pepper
  • 1 courgette
  • 200g mushrooms
  • 5 small potatoes
  • 1 tin borlotti beans
  • 1x400g tin chopped tomatoes
  • 400ml veg stock
  • 3 tbsp tomato puree
  • 2 tbsp tamari
  • 1 tsp smoked paprika
  • 1 tbsp ground cumin/caraway seeds
  • 1 tsp ground cinnamon
  • 1/2 tsp black pepper
  • 1 bay leaf
  • salt
  • oil
  • baby spinach to garnish


  • Peel and finely chop the onion and garlic cloves. Finely slice the carrot, the peppers, courgette, potatoes and chop the mushrooms into quarters.
  • Pour 2 tbsp oil into a large pot on a high heat. Add the chopped onion and garlic and cook for 2 minutes stirring regularly.
  • Add the carrot and pinch of salt and cook for 2 minutes. Add the prepped peppers, courgette, potatoes and mushrooms and cook for a further 2 minutes on a high heat.
  • Add the chopped tomatoes, tamari, veg stock, tomato puree, tinned beans, ground cumin, smoked paprika, cinnamon, black pepper and bay leaf and stir
  • Bring to boil and reduce to simmer for about 10 minutes. Taste that the carrot and potatoes are cooked, if so, your dinner is ready!
  • Season to taste with some salt and black pepper, add spinach to garnish if you wish and ENJOY!
