Breakfast can always be a rush but that’s no excuse not to have an amazing breakfast. This granola is healthy and delicious and takes a breezy 5 minutes!!

INGREDIENTS

80g mixed nuts (almonds / walnuts)
80g sunflower seeds
40g pumpkin seeds
1 tbsp chia seeds
40g desiccated coconut
Pinch of salt
Pinch of cinnamon
35g coconut oil / 2 tbsp
35ml maple syrup
1/2 tsp vanilla essence

INSTRUCTIONS

  • Add the mixed nuts, desiccated coconut, sunflower, pumpkin and chia seeds to the food processor and blitz until all ingredients are broken down but with some texture still remaining
  • Add coconut oil & maple syrup to a hot pan and heat until coconut oil is melted
  • Add the nut & seed mixture and mix thoroughly with the oil & maple mixture
  • Add 1/2 vanilla essence
  • Continue to combine the mixture making sure all the dry ingredients are coated
  • Pimp with: Cacao Nibs, Goji Berries or Raisins
  • Serve with: Non Dairy Milk or Coconut Yoghurt
