Curries are great fun to cook, and even more fun to eat!! There are countless recipes from all over the world and whilst tastes vary, you can be sure that this Massaman Curry is a delicious saucy curry full of rich flavours and LOTS of veg.

INGREDIENTS

300g tempeh
1 tsp cumin seeds
2 tbsp tamari or soy sauce
3 chopped scallions
1 tbsp maple syrup
1 red bell pepper chopped
1 yellow bell pepper chopped
chopped pak choi
1 heaped tsp turmeric
beansprouts
For paste:
1 twig lemongrass sliced
3 cloves of garlic
thumb sized piece of ginger
1/2 a red chili
1 tsp cumin seeds
1 tsp coriander seeds
1 tsp cinnamon
1 tin of full fat coconut milk
500ml vegetable stock
1.5 tbsp of almond or peanut butter
1 tsp maple syrup
squeeze of lemon juice

INSTRUCTIONS

1. Chop tempeh finely and start to fry in the pan
2. Add all paste ingredients together and blend
3. Add 1tsp of cumin seed to the pan so they start to toast and 2tbsp tamari to fry with the tempeh
4. Pour in a small bit of sauce and start adding your chopped vegetables
5. Add 1 tbsp maple syrup and make sure that you are addiong sauce slowly so that it frys and marinates rather than boils
6. Add rest of sauce, pak choi, tumeric, chilli and scallions to serve
7. Serve with grain of your choice and add some fluffy potatoes if you have time.
