We are all aware the summer is winding down and the evenings will be getting shorter, what better to combat this than one of our childhood comfort foods. The humble cheese toasty… The food equivalent of a big warm blanket and hug.

INGREDIENTS

For the cheese:

  • 80g boiled potatoes
  • 60g boiled carrots
  • 60ml sunflower oil
  • 15ml rice milk
  • 1 tsp garlic powder
  • 3/4 tsp salt
  • 2 tsp arrowroot
  • 1 tbsp nutritional yeast
  • 1 tbsp lemon juice
  • Pinch of black pepper

Other:

  • Sliced pan
  • Onion
  • Oil

INSTRUCTIONS

  • Preheat your sandwich maker or grill
  • Blend together your cheese ingredients to a mustard-like consistency
  • Spread your cheese between the sliced pan, adding your desired amount of onions or alternative toppings
  • Oil one side of each sandwich and place oil side down on the sandwich maker/grill
  • Oil the side of bread that is facing up
  • Toast to your desired amount and SERVE!!!
