People can be quite picky about their cookie preferences, so we wanted to show you a REALLY simple way to whip up a combination batch of chewy, chocolate-y and melt-in-your-mouth-y cookies, so that way everyone at the table is happy!

INGREDIENTS

Base Ingredients:

  • 300g white flour
  • 200g coconut oil *make sure it’s melted*
  • 100g coconut sugar

 Shortbread Cookies:

  • Leave as base recipe

Chocolate Chip Cookies:

  • 1 level teaspoon baking powder
  • Pinch of salt
  • 50g maple syrup
  • Handful of dark chocolate chips

Oatmeal Cookies:

  • 50g oats
  • 25g maple syrup
  • Handful nuts (we used pecans)
  • Handful of goji berries

INSTRUCTIONS

Base Ingredients:

  • Mix the melted coconut oil and flour until it becomes one cohesive batter
  • Add in the coconut sugar and mix again
  • Divide into 3 bowls (be a bit more generous with the shortbread bowl as this doesn’t have anything else added to bulk it up)

 Shortbread Cookies:

  • Pop the bowl in the fridge until it hardens a bit and is easier to shape
  • Roll up into little balls and press down on a lined baking tray/ use a biscuit cutter to mould into shape

Chocolate Chip Cookies:

  • Add the additional ingredients to the base ingredients and mix altogether
  • Roll up into little balls and press down on a lined baking tray/ use a biscuit cutter to mould into shape

Oatmeal Cookies:

  • Add the additional ingredients to the base ingredients and mix altogether
