This Vegan Korma is so easy to make, it can be done in 5 minutes but you can let it stew more to let the veg really soak up the flavours if you have the time. Did you know a traditional Korma takes 2 and a half hours to make?

INGREDIENTS

  • 3 cloves garlic chopped
  • Thumb sized piece of ginger chopped
  • Half a red chili pepper chopped
  • 1 tablespoon olive oil
  • 4 scallions finely chopped
  • 1 cauliflower or any other veg you want chopped
  • 1 large red bell pepper chopped
    For sauce
  • 1 tin full fat coconut milk
  • 1 tin of chopped tomatoes or fresh of same quantity
  • 3 tablespoons curry powder
  • Pinch of black pepper
  • 1.5 teaspoons of salt
  • 1 teaspoon of maple syrup
  • Juice of half a lime
  • Fresh coriander to garnish

INSTRUCTIONS

  • Fry the finely chopped garlic, ginger and chilli pepper in the oil
  • Add the rest of your veg to the pan
  • Add the coconut milk, tin of tomatoes, curry powder, black pepper, salt, maple syrup and lime juice to the pan for the sauce
  • Toss in the chopped coriander and enjoy!
