We teamed up with the amazing Rose of Cheap Lazy Vegan to make her Vegan Mac and Cheese recipe! We’re Mac and Cheese virgins so it was interesting to learn how to make, and now this is definitely one we want to try with our kids. 

INGREDIENTS

500g wholewheat penne pasta

2 cloves of garlic

1.5 cups of raw soaked/ boiled cashews

Juice of half a lemon

1/2 tsp of turmeric

1/2 cup of nutritional yeast

1/2 cup of almond milk

1/2 tbsp smooth mustard

1/2 tsp chilli powder

1/2 tsp of smoked paprika

A pinch of sea salt

INSTRUCTIONS

  • Soak the cashews overnight (or boil and allow to soften for 15mins)
  • Cook the pasta in boiling water (boil for 9mins)
  • Add a pinch of salt to the pasta
  • Put all the rest of your ingredients into a blender and… Blend! (Tip: Add a bit of water as it blends, according to your preference)
