This epic parmesan cheese recipe comes from Julie Piatt’s (@srimati) new book – “This Cheese is Nuts” The perfect topping for pastas, salads and really anything else you’d like!


  • 500g whole cashews
  • 2 tbsp nutritional yeast
  • 1 tsp salt
  • 1 tsp light miso paste
  • 1 tsp lemon juice
  • 1/2 clove of garlic


  • First blend your cashews into quite a mealy consistency
  • Blend together the rest of your ingredients- make sure there’s still texture
  • Serve however you’d like!
