With the help of our head baker Jen, we’re going to show you how to make gorgeous, “I-can’t-believe-they’re-vegan!” vegan scones 4 ways!! Believe us when we say there’s one for everyone in the house 😉😉

VEGAN SCONES (TRADITIONAL X3 WAYS)

INGREDIENTS

  • 1kg spelt flour
  • 120g sugar (can use coconut sugar if you want)
  • 15g baking powder

 For Apple & Cinnamon Scones:

  • 1 apple
  • 1/4 tsp cinnamon

For Sultana Scones:

  • A handful of sultanas

For the Raspberry Scones:

  • A handful of fresh raspberries

INSTRUCTIONS

  • Mix all your dry ingredients in together in a big bowl
  • Separate your dry ingredients into three
  • Make a well in the centre
  • Get your can of coconut milk and mix together so that the fat and liquid have combined evenly.
  • Add the coconut milk to the centre of the bowl (about 100ml for each mixture) and mix the wet and dry ingredients together to form one big ball of dough
  • (Add more coconut milk or flour as needed)
  • Set out your mixture on a floured surface
  • Pat it down to your desired thickness and cut out the individual scones with a scone cutter
  • Line your tray with baking parchment
  • Glaze over each with some coconut milk
  • Pop the tray into the oven at 180degrees for 35mins
  • Leave the scones out on a wire rack to cool down

 

 For Apple & Cinnamon Scones:

  • Peel the one apple, chop it up and pop it into the mix
  • Add 1/4 tsp cinnamon

For Sultana Scones:

  • Add about a handful of sultanas to the mix

For the Raspberry Scones:

  • Add one handful of fresh raspberries to the mix
  • Mix the raspberries in, but not to much as you want to keep some lovely chunks

WHOLEMEAL SCONE

INGREDIENTS

  • 300g wholemeal flour
  • 10g baking powder
  • 60g sugar (caster sugar/ coconut sugar etc)
  • 150g coconut milk

INSTRUCTIONS

  • Mix all your dry ingredients in together in a big bowl
  • Separate your dry ingredients into three
  • Make a well in the centre
  • Get your can of coconut milk and mix together so that the fat and liquid have combined evenly.
  • Add the coconut milk to the centre of the bowl and mix the wet and dry ingredients together to form one big ball of dough
  • (Add more coconut milk or flour as needed)
  • Set out your mixture on a floured surface
  • Pat it down to your desired thickness and cut out the individual scones with a scone cutter
