Christmas is a hard time for turkeys, especially Dustin, Ireland’s favourite Turkey. We decided to invite him into the studio to show him a delicious recipe for vegan “turkey”, and he just couldn’t get enough of the stuff!! This is a lovely “Christmas dinner leftovers”-style sandwich that will make anyone happy this Christmas!

VEGAN TURKEY SANDWICH

INGREDIENTS

  • 1 clove of garlic
  • 80g cooked chestnuts
  • 30g cashew nut butter (can use almond or peanut butter either!)
  • 2 tbsp tamari
  • pinch of salt
  • pinch of black pepper
  • 80g butter beans
  • 2 slices of bread (if making a sandwich)
  • 2 tbsp oil for frying

INSTRUCTIONS

  • Put all the ingredients into a food processor until it’s super smooth
  • Pour the oil into a frying pan
  • Take a spoonful of the “turkey” mixture and pat down into your hands until it resembles a thin pattie/ turkey breast
  • Fry the patties in the pan until they are golden brown
  • Grab your toast and add the turkey to your sauces, fillings and condiments of choice!
