Being vegan while studying doesn’t have to be expensive or hard. This easy pasta dish is the PERFECT example of this. You don’t need a lot of ingredients to have a dinner BURSTING with flavour!!!

Ingredients
 500 g wholewheat pasta
 1 tsp salt
 3 cloves of garlic
 1 red onion
 1 tbsp Olive oil
 1 red chilli
 1 courgette
 1 red pepper
 20 cherry tomatoes
 40 g basil
 Olives, flaked almonds, nutritional yeast and chilli flakes to pimp it out

Instructions

Cook the pasta according to instructions on the packet

Chop up all your veg

With a pan on a high heat, add in 2 tbsp olive oil

Once heated add the garlic, onion and chilli. Reduce the heat to medium and cook for 2 minutes

Add in your courgette, pepper and basil stalks finely chopped along with a good pinch of salt. Cook for 2 mins, stirring occasionally.

Next, add in the cherry tomatoes and another generous pinch of salt

Put on the lid of the pan so that the moisture doesn’t evaporate and cook the veg until the pasta is ready

Add the pasta into the pan along with some of the pasta water to create a nice sauce

Mix in the basil leaves

Serve with with our suggestions or whatever you have lying around!
