Peel and finely chop the garlic and onion. Chop the mushrooms into bite size pieces. Pick the thyme leaves and chop.
Put a large non-stick pot on high heat. Add 1 tbsp of oil. Once it's hot, add the onion and garlic and 1 tsp of salt. Reduce the heat to medium and cook for 2-3 minutes, stirring regularly. Add the mushrooms, remaining 1/2 tsp of salt and cook for 2 minutes, add the wine and allow to evaporate, add the black pepper and chopped thyme, mix well so the mushrooms are coated.
Add the milk, stock and pasta, bring to a boil then lower the heat and simmer for 10 minutes until the pasta is cooked and the mushroom sauce has thickened. Taste and season if needed. Mix the nutritional yeast through the sauce for an extra cheesy flavour. Serve and enjoy!
