Ratatouille is a delicious belly warmer with a name fancy enough to impress anyone you cook for. This one cooks itself, once you have everything in the pan Mr. Oven does the rest.

Ingredients
Serves: 3-4
 Olive oil
 1 Red onion
 1 head of garlic
 1 courgette
 1 aubergine
 1 red pepper
 1 yellow pepper
 200 g potatoes
 2 bay leaves
 ½ tsp black pepper
 1 ½ tsp salt
 400 ml water
 2 tins of tomatoes
 1 tsp mixed herbs
 Basil to garnish

Instructions

Preheat oven to 160 degrees celcius

Roughly chop your veg and cut the top off the garlic

Put 1 tbsp oil into an oven proof pan on a high heat and add the onion. Add the courgette, peppers, potatoes, aubergine and bay leaves

Reduce to medium heat and add the black pepper, tins of chopped tomatoes, salt and water

Cover the pan with a lid and bake in oven for 1 hour along with the head of garlic which you roast for about 25 minutes

Take out your ratatouille and check the potatoes are cooked

Add your mixed herbs and roughly chop the roasted garlic and mix through

To garnish, pluck the basil leaves off the stalk and add to your ratatouille
