Vegan Bacon is one of the most popular recipes from our new book. This is a great weekend treat or great in a sandwich any day of the week. It’s full of flavour, and, in our opinion, even better than the real thing! Enjoy!

Ingredients
 1 tsp smoked paprika
 2 cloves of garlic, crushed or finely chopped
 2 tbsp tamari
 1 tbsp tomato purée
 1 tbsp apple cider vinegar
 2 oil
 1 tbsp water
 1 tsp maple syrup/liquid sweetener of your choice
 150 g fresh tempeh
 Some extra oil for frying (about 2 tbsp)

Instructions

Make the marinade by blending or mixing all of the ingredients together (except for the tempeh & the extra oil) until super smooth, using a stick blender, food processor or a bowl and a fork/whisk.

Slice the tempeh into very thin slivers, rasher size, about 1/2cm thick, and place in a bowl with a flat bottom. Spread the marinade evenly over the sliced tempeh and leave to sit for 5-10 minutes. The longer you leave to marinade, the deeper the flavour will be!

Put a non-stick frying pan on a medium heat & heat the extra oil. Add the marinated tempeh, turning it over so that each side is nice and crispy. Serve with a veggie fry, in a sandwich or on its own – delish!
