Vegan Mac & Cheese

We teamed up with the amazing Rose of Cheap Lazy Vegan to make her Vegan Mac and Cheese recipe! We’re Mac and Cheese virgins so it was interesting to learn how to make, and now this is definitely one we want to try with our kids.

The Happy Pear Vegan Mac & Cheese

 500 g wholewheat tube pasta of choice.
 2 cloves of garlic
 150 g cashews
 125 ml almond milk or alternative milk of choice
 25 g nutritional yeast
 ½ lemon - juice of
 ½ tbsp ground turmeric
 ½ tsp chilli powder
 1 tsp smoked paprika
 ½ tbsp smooth dijon mustard

Put the pasta on to cook in a large pot of salted boiling water. Follow pack directions.


Soak your cashew nuts overnight. If you do not have time to soak the cashew nuts overnight, simply boil them for 10 minutes to soften. They will blend much smoother.


Drain and rinse the cashews. Peel the garlic. Add the cashews to a blender with the remaining ingredients. Blend until smooth. Adding a few more tablespoons of water or alternative milk if needed to make a creamier texture.


Drain the pasta and mix with the cashew "cheese" sauce. Coating all the pasta well.

Pop into an oven proof dish and bake for 10 minutes in a 180 C oven to get a crispy top or serve straight away as is. Enjoy!
