Frozen Yoghurt Chocolate Date Bites


These are one of our favourite freezer treats. Sweet caramel-like dates are layered with creamy plant-based yoghurt, crunchy nuts and a crackly dark chocolate topping. They taste wonderfully indulgent but are made with simple whole-food ingredients. Keep a batch in the freezer and you'll always have a delicious sweet bite ready whenever the craving strikes.

Serves 12

Ingredients
 

  • 12 Medjool dates approximately 240g
  • 200 g plant-based yoghurt ¾ cup
  • 30 g chopped pistachios or peanuts ¼ cup
  • 150 g dark chocolate 1 cup chopped
  • 15 g extra chopped pistachios or peanuts 2 tbsp, optional
  • 2 g flaky sea salt ½ tsp

Instructions
 

Prepare the Date Base

  • Line a small baking tray or container with baking parchment.
  • Remove the stones from the dates and arrange them close together on the lined tray. Place another sheet of baking parchment on top and use the bottom of a glass to gently press the dates down into an even layer approximately 1cm thick.
  • Carefully remove the top sheet of parchment.

Add the Yoghurt Layer

  • Spread the plant-based yoghurt evenly over the flattened dates.
  • Sprinkle over the chopped pistachios or peanuts.
  • Place in the freezer for 20–30 minutes until the yoghurt has firmed up.

Add the Chocolate Topping

  • Melt the dark chocolate in a heatproof bowl over a pan of simmering water, or in short bursts in the microwave.
  • Remove the tray from the freezer and spoon the melted chocolate evenly over the yoghurt layer.
  • Sprinkle with the extra nuts, if using, and finish with a scattering of flaky sea salt.

Freeze and Serve

  • Return to the freezer for 10–15 minutes, or until the chocolate has fully set.
  • Cut into 12 bite-sized pieces and enjoy straight from the freezer.
  • Store in an airtight container in the freezer for up to 1 month.
