High Protein Spaghetti Bolognese in 15 mins


Super tasty, quick to make and packed full of protein and fibre. Served with protein-packed pasta like red lentil or black bean spaghetti, it's a hearty meal that doesn't skimp on flavour. We love to serve this with some garlic bread to take it to the next level! This dish also freezes well as part of a meal prep

Takes 15 minutes

Serves 4

Ingredients
 

  • 1 red onion
  • 1 carrot
  • 100 g walnuts/ pecan nuts
  • 1 x 400g tin of lentils
  • 2 x tins of chopped tomatoes 800g
  • 135 g The Happy Pear Sundried Tomato Pesto
  • 300 g spaghetti such as red lentil or black bean for high protein
  • Salt to taste
  • A small bunch of basil or flat parsley

Instructions
 

  • Cook the spaghetti according to the package instructions. Drain and rinse the lentils. Roughly chop the walnuts or pecans
  • Peel and finely chop the onion. Finely dice the carrot into a tiny dice.
  • Heat a large pan over high heat and add a tablespoon of oil. Once hot, add the onion and cook for 2 minutes, stirring regularly.
  • Add the carrot,chopped walnuts and the drained tin of lentils along with 1 teaspoon of salt to the pan. Cook for another 3-4 minutes, stirring often.
  • Add the tub of The Happy Pear Sundried Tomato Pesto followed by the 2 tins of chopped tomatoes. Mix well and allow to cook for 2-3 mins stirring regularly.
  • Taste and adjust the seasoning to your liking by adding more salt or ground black pepper.
  • Drain the cooked spaghetti and add it to the sauce, mixing to combine.
  • Roughly chop the basil or finely chop the parsley and sprinkle over the Bolognese to garnish.
  • Serve hot and enjoy with optional garlic bread for a complete meal.
