Potato & Leek Soup
We teamed up with the beautiful Melanie Murphy to make Potato and Leek soup. This soup is a cornerstone of the Irish winter diet.

Serves
- 2 medium leeks
- 4 large potatoes
- ½ an onion
- 3 cloves of garlic
- 2 litres of veg stock
Peel and finely chop the onion and garlic. Chop the leek and potatoes.
Put a large saucepan/pot on a high heat. Add 2 tbsp oil.
Add the onion and garlic to the pan and cook for 3 minutes stirring regularly.
Add the leek and potatoes and stir well and cook for a minute.
Add 2 litres of vegetable stock
Bring to the boil or until potatoes are soft
Blend with a hand blender.
Taste and season with salt and pepper to your taste
Enjoy with a nice slice of bread!
