Snickers Overnight Oats


A rich, indulgent yet nourishing breakfast that tastes like dessert but fuels you like a champion. Think chocolatey oats layered with a creamy date caramel and crunchy peanuts all inspired by the classic Snickers combo, but made with wholesome plant-based ingredients!

Serves 2

Ingredients
 

For the oats

  • 100 g oat flakes 1 cup
  • 2 tbsp cocoa powder
  • 200 ml oat milk ⅓ cup
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup
  • Pinch of salt

For the date caramel

  • 100 g dates about 1 cup, pitted
  • 50 g peanut butter ¼ cup
  • 150 ml water ⅔ cup
  • Pinch of salt
  • ½ tsp vanilla extract

Toppings

  • 50 g roasted salted peanuts ⅓ cup
  • 100 g dark chocolate about ¾ cup chopped or chips

Instructions
 

Make the oat base

  • In a bowl, mix the oat flakes, cocoa powder, oat milk, vanilla extract, maple syrup and a pinch of salt. Stir well until fully combined.

Prepare the date caramel

  • Add the dates, peanut butter, water, salt and vanilla extract to a blender or food processor. Blend until smooth and creamy. Add a little more water if needed to loosen the texture.

Assemble

  • Divide the chocolate oat mixture between two jars or containers. Spoon over a generous layer of date caramel.

Add toppings

  • Sprinkle over the roasted peanuts and finish with melted or chopped dark chocolate.

Chill

  • Cover and leave in the fridge overnight (or at least 4 hours).

Serve

  • Enjoy straight from the fridge, or let it sit at room temperature for 5–10 minutes before eating.
