Stuffed Sourdough Batard Sandwich


This is the ultimate centrepiece sandwich! It’s perfect for sharing, picnics, or a crowd-feeding lunch. A crusty sourdough loaf is hollowed out and packed with layers of flavour: creamy hummus, savoury tofu, fresh veg, and punchy pesto. It’s hearty, colourful, and seriously satisfying.

Ingredients
 

  • 1 large sourdough batard loaf
  • 200 g The Happy Pear Roasted Red Pepper Hummus ¾ cup
  • 300 g firm tofu
  • 1 tbsp tamari 15ml
  • 1 tbsp olive oil 15ml
  • 1 cucumber sliced
  • 1 beetroot cooked & sliced
  • 2 tbsp olive oil 30ml
  • 2 tbsp vinegar 30ml
  • 1 tbsp maple syrup 15ml
  • Pinch of salt & black pepper
  • 150 g vegan cheese 1 cup grated or sliced
  • 100 g Basil Pesto ⅓ cup
  • 100 g The Happy Pear Sundried Tomato Pesto ⅓ cup
  • 1 large handful mixed leaves 40g

Instructions
 

Prep the loaf:

  • Slice the top off the sourdough loaf and set it aside. Scoop out some of the soft interior to create a hollow cavity for the filling.

Cook the tofu:

  • Slice the tofu and fry in 1 tbsp olive oil over medium heat until golden. Add the tamari and cook for another 1–2 minutes until nicely coated. Set aside.

Dress the beetroot:

  • In a small bowl, mix the olive oil, vinegar, maple syrup, salt, and pepper. Toss the sliced beetroot in the dressing.

Assemble the sandwich:

  • Start layering inside the hollowed loaf spread a generous layer of hummus on the base, add the fried tofu, layer in sliced cucumber, vegan cheese, spoon over basil pesto, add dressed beetroot and finish with mixed leaves

Finish the lid:

  • Spread sundried tomato pesto on the inside of the “lid” of the loaf, then place it back on top.

Serve:

  • Press down gently, then slice into 6 thick wedges and serve.
