Takes 10 minutes

Serves 6

Ingredients

  • 100 g almonds ¾ cup
  • 20 g desiccated coconut ¼ cup
  • 50 g defatted peanut powder ½ cup
  • 120 g pumpkin seeds ¾ cup
  • 1 tbsp cocoa powder
  • 5 g freeze-dried raspberries or strawberries
  • 20 g coconut oil 1½ tbsp
  • 35 ml maple syrup 2 tbsp
  • A pinch of salt
  • ½ tsp vanilla extract

Instructions

  • Add the almonds, pumpkin seeds and desiccated coconut to a food processor. Pulse until roughly chopped, keeping some texture. Add the cocoa powder and peanut powder and pulse briefly until combined.
  • Heat the coconut oil in a large, wide-based frying pan over a medium heat until melted. Add the nut and seed mixture and toast for 3–5 minutes, stirring continuously, until lightly toasted.
  • Add the maple syrup and vanilla extract and mix well until everything is coated. Taste and add a little more maple syrup if you'd prefer a sweeter granola.
  • Remove from the heat and leave to cool. For clusters, spread the mixture onto a lined baking tray, press it down firmly and leave to cool completely.
  • Once cooled, roughly crush the freeze-dried raspberries or strawberries and stir them through the granola.
  • Store in an airtight jar or container for up to one month. Serve with your favourite milk or yoghurt, or sprinkle over porridge for a delicious start to the day.
