Viral Date Iced Coffee


If you're a fan of iced caramel lattes, this homemade version is well worth trying. The natural sweetness of Medjool dates blends beautifully with rich coffee to create a creamy caramel-like syrup that's packed with flavour and fibre. It's simple to make, naturally sweetened and perfect for warm days when you need a refreshing coffee fix.

Ingredients
 

  • 200 g Medjool dates stones removed (approximately 1 cup packed)
  • 300 ml strong freshly brewed coffee 1¼ cups
  • 700 ml oat milk 3 cups
  • 400 g ice cubes approximately 4 cups

Instructions
 

Make the Date Coffee Caramel

  • Remove the stones from the dates and place the dates in a heatproof bowl or jug.
  • Pour the hot freshly brewed coffee over the dates and leave to soak for 3 minutes to soften.
  • Transfer the coffee and dates to a blender or food processor and blend until completely smooth and creamy. This may take 1–2 minutes depending on the strength of your blender.

Assemble the Drinks

  • Divide the ice between two 400ml glasses.
  • Pour the oat milk into each glass, filling them about three-quarters full.
  • Divide the date coffee caramel mixture evenly between the glasses.
  • Stir well until fully combined and serve immediately.

Tips

  • For an extra cold and creamy drink, chill the oat milk before using.
  • Any leftover date coffee caramel can be stored in an airtight container in the fridge for up to 3 days and stirred into porridge, smoothies or more iced coffee.
