Vegan Rainbow Meal PrepVegan Rainbow Meal Prep is a really handy way to make sure you have all the amazing minerals, vitamins and nutrients you should be getting on a daily basis. It's all really easy to make and you should have it done within the hour and all the recipes are just as good as stand alone meals. Spaghetti CarbonaraSpaghetti Carbonara! This dish was traditionally used to feed Italian coal miners to refuel after a hard days work! Normally carbonara is made with 4 ingredients - pasta, pasta water, cheese, and pancetta, we came up with a #vegan version using the same principals. Vegan Egg McMuffinAlthough we have never actually eaten a real Egg McMuffin we still had great fun trying to recreate this well known fast food brekkie. Our vegan version looks so like the real thing, tastes great and is made with vegan sausage and tofu eggs. This is a great weekend brunch treat that will be a hit with everyone and a great breakfast on the go.Raspberry Chia PuddingHere’s a lovely raspberry chia pudding full written recipe down below, perfect for those mornings when you're short on time. French ToastThis vegan French toast is a perfect mix of sweet and savoury a great easy brunch to impress your family and friends. ‘Cheesy’ Nacho BowlA healthier take on the original here, as we bake the tortillas instead of deep-frying them. Combined with a lovely zingy salsa and refried black beans, it makes a fab shared snack for parties - defo one of our fav sharing party plates! This is based on a Mexican dish called chilaquiles, which we had a variation of in our friend Luca's fab café, the Fumbally. If you're in a rush, simply replace the tortillas with your fav tortilla chips to save time!

It's hard to get decent quality breadcrumbs so we usually make our own by simply putting a few slices of decent bread in the food processor for a few minutes till they turn to breadcrumbs.
