Peanut Rayu

This epitomises the word flavour bomb! It goes amazing served with noodles as it has this wonderful fried garlic, roasted peanut note with an umami background and a lovely smokey spice – it goes great with virtually all savoury foods. Just mix before serving as the oil separates.

Serves 1


  • 100 g peanuts
  • 10 cloves garlic
  • 200 ml oil
  • 2 tbsp guacugaru alternatively 1 tbsp smoked paprika & 1 tbsp chilli mixed together
  • 1.5 tbsp coconut sugar
  • 2 tsp salt
  • 3 tbsp sesame seeds
  • 2 tbsp tamari soy sauce


  • Roast peanuts for 15 mins 180 degrees c, take out and roughly chop
  • Peel and finely slice the garlic into thin slices.
  • Add the garlic to oil while cold and heat on medium to high heat till garlic is lightly golden and crispy if you over cook the garlic it will go bitter so just be careful to stop it cooking before it goes golden)In a medium bowl mix the guacugaru/ smoked paprika & chilli, with the coconut sugar, salt and mix well.
  • Use a sieve to catch garlic while pouring the hot oil over the sugar, salt spice mix and mix well.Roughly chop the crispy garlic.
  • Stir in the roughly chopped peanuts, crispy garlic, sesame seeds, sesame oil and tamari/ soy sauce and mix well Season with salt and pepper to taste.
