These are simple, delicious and packed with protein and wholefoods. Mix and match the ingredients to what you have in your cupboard and leave out the chocolate for a healthier version

Ingredients
12large medjool dates
75gpistachios
75gcashew nuts
50gpeanut butter
50gmixed seeds
25ggoji berries
1tbspcoconut oil
1tspcinnamonoptional
200gdark chocolate
Instructions
Remove the stone in the dates and roughly chop them up.
Heat the coconut oil in a pan over medium heat.
Once it has melted add the peanut butter and mix till it starts to come together.
Add the remaining ingredients (except the dark chocolate) and mix and cook for 5-8 mins until the dates soften, mash them to ensure all the ingredients are mixed together and the dates have broken down. .
Turn off heat and once cooled, transfer the date mixture to some baking paper and roll into a log shape, making sure to roll it tightly so that it will hold its shape.
Refrigerate the log for 10 mins to make it easier to slice or simply slice through the paper while warm. It does hold its shape better when cool so do your best to be patient!
Melt your chocolate using a bain marie or microwave. Cover each piece with chocolate.
