Tuscan One-Pan Bean Bake with Sun-Dried Tomatoes & Basil


This Tuscan-inspired bean bake is a simple, hearty one-pan dish packed with Mediterranean flavours. Sweet onions, garlic, sun-dried tomatoes and herbs create a rich tomatoey base for creamy butter beans.. It’s rustic, nourishing and incredibly easy! Once the onions and garlic are cooked, everything else goes straight into the pan and into the oven. Perfect served with warm sourdough to mop up the juices.

Serves 4

Ingredients
 

  • 2 tbsp olive oil
  • 1 large onion
  • 2 cloves garlic
  • 2 tins 500g drained butter beans or cannellini beans, drained and rinsed
  • 120 g sun-dried tomatoes (dried no oil)
  • 2 tbsp The Happy Pear Sundried tomato Pesto
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • ½ tsp chilli flakes optional
  • 2 tbsp capers optional
  • 1 tin 400g chopped tomatoes
  • ½ tin of coconut milk 200ml
  • Zest of 1 lemon
  • Small handful fresh basil leaves torn

To serve (optional)

  • Toasted pine nuts or almonds
  • Extra fresh basil
  • A squeeze of lemon juice
  • Crusty sourdough or focaccia

Instructions
 

  • Preheat the oven to 200°C (180°C fan). Peel and finely dice the onion and garlic, drain and rinse the beans and finely slice the sun dried tomatoes. Roughly chop the fresh basil.

Cook the aromatics.

  • Heat the olive oil in a large ovenproof pan or shallow casserole over medium heat. Add the diced onion with a pinch of salt and cook for 5–6 minutes until soft and lightly golden. Stir in the garlic and cook for another minute until fragrant.

Add the rest.

  • Add the butter beans, sun-dried tomatoes, sundried tomato pesto, oregano, smoked paprika, chilli flakes (if using), capers, chopped tomatoes, coconut milk and lemon zest. Stir well to combine.

Add the basil.

  • Fold in most of the basil.

Bake.

  • Transfer the pan to the oven and bake for 15-20 minutes, until the sauce has thickened slightly and smells wonderful!

Finish and serve.

  • Remove from the oven, stir through the remaining basil and add a squeeze of lemon juice. Taste an adjust the seasoning to your liking by adding more salt, ground pepper or lemon juice. Serve with some fresh sourdough for a beautiful hearty meal!
