These are such a beautiful way to celebrate spring and wild garlic season! Wild garlic grows in damp woodlands, often near streams, and when blended with butter it makes the most vibrant green garlic bread filling. These yeast-free swirls are quick to make, look stunning, and taste even better.

300gself-raising flour2 cups
½tspsalt
70gcold vegan buttercut into small cubes (5 tbsp / ~⅓ cup)
150mlwater⅔ cup
Wild Garlic Butter
100gvegan butter7 tbsp / ~½ cup
100gwild garlicabout 4 packed cups
Instructions
Preheat the oven to 180°C (fan 160°C) and line 2 baking trays with parchment paper.
Blanch the wild garlic: Bring about 100ml water with 1 tsp salt to a boil in a small saucepan. Add the wild garlic and blanch for 3 minutes until wilted. Drain, rinse under cold water, and squeeze out any excess liquid. Blend with the butter in a food processor until you have a smooth, vibrant green garlic butter.
Make the dough: In a large bowl mix the flour and salt. Add the cold butter and rub it into the flour with your fingertips until the mixture resembles coarse breadcrumbs. Add the water and mix until it forms a soft dough, then knead lightly for 3–4 minutes until smooth.
Shape the swirls: Roll the dough on a floured surface into a large rectangle (about 50cm x 30cm). Spread the wild garlic butter evenly over the dough. Fold the dough in half lengthwise, then cut into 12 strips (about 3cm wide). Twist each strip and coil it into a swirl, placing them on the lined trays.
Bake: Brush the tops with a little oil or melted butter and bake for about 25 minutes, until golden. Sprinkle with a little flaky salt and enjoy warm.
