The “5 Minute Dinner” series has returned with our current favourite meal – The Buddha Bowl!!! We love these because they’re delicious and so customisable to your own personal taste, plus they make for a great way of clearing out the fridge or the cupboard and making a meal out of leftovers too!

INGREDIENTS

  • Oil
  • Pre cooked whole grain brown rice
  • 1 onion finely chopped
  • 2 cloves of garlic finely chopped
  • 1 red chilli finely chopped
  • 1x400g can of black beans
  • 1/2 tsp salt
  • 1/2 tbsp ground cumin
  • 1/2 tbsp tamari
  • Pinch of black pepper
  • 80g baby spinach
  • 1/2 avocado
  • 2 heaped tbsp kim chi
  • 1 orange
  • 4 heaped tbsp hummus
  • handful of raspberries
  • handful of cashew nuts

INSTRUCTIONS

  • Add 2tbsp oil to a pan on a high heat
  • Once heated add the chopped onion, chilli and garlic and fry off
  • Drain and rinse the black beans and add to pan
  • Add the salt, cumin, tamari, black pepper and baby spinach
  • Once cooked add to bowl alongside half an avocado, cooked rice, kimchi, hummus, orange segments, raspberries and top with cashew nuts and chilli flakes!
