A vegan omelette is a great lunch idea it’s like the ultimate savoury pancake. This one is packed full of seasoning and is fully customisable to suite your taste. It’s a great way to get veg into your meals for you or kids or just anyone who doesn’t like veg all that much. We’ll hopefully be making more videos about delicious filling combinations soon.

INGREDIENTS

Makes 2 omelettes

  • 2 tbsp oil
  • 2 cloves finely chopped garlic
  • Handful of spinach
  • 4 chopped cherry tomatoes
  • 230ml oat milk
  • 120g sieved gram flour
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika
  • 1/2 tsp baking powder
  • 1/2 tsp onion powder
  • 2 tbsp nutritional yeast
  • 1 tsp salt
  • 1 1/2 tbsp tamari
  • 1 tbsp pesto

INSTRUCTIONS

  • Add 1 tbsp oil to each of two pans on a high heat
  • To one pan add the garlic, cherry tomatoes and spinach and keep them moving for 2 minutes before taking off the heat
  • Mix together the gram flour, oat milk, pepper, smoked paprika, baking powder, onion powder, nutritional yeast, salt, tamari and pesto
  • Add half the mixture to the pan to make 1 omelette
  • Spread it out thinly and cook until it starts to firm up and bubble at the top and then add the spinach mixture to 1 half
  • Fold over the omelette and cook for another minute
  • Serve and enjoy!
