Cooking a delicious meal doesn’t have to be difficult or expensive, using accessible ingredients and some super savvy shopping tips we’ve created this lovely recipe perfect for every level of chef.

Ingredients
 1 tbsp Oil
 1 medium onion
 ½ a thumb sized piece of ginger
 ½ a red chilli
 1 x 400g tin of beans of choice
 1 x 400g tin of chopped tomatoes
 1 x 400g tin of coconut milk
 3 tbsp tamari
 2 tbsp curry powder
 1 level tsp black pepper
 ½ juice of a lemon
 5 tbsp water
 1 Handful of chives
 4 Pitta bread to serve

Instructions

Add one and half tbsp of oil to a pan on a high heat

Finely chop your onion, garlic, chilli and ginger and fry on a high heat for 2 minutes, stirring regularly

Drain and rinse your beans

Pour in the coconut milk and chopped tomatoes

Add the tamari, curry powder and ground black pepper

Squeeze in the lemon and add the beans and water

7

Let your curry boil and reduce so the sauce can thicken for about 8 minutes

Finely chop the chives and add them in

Serve with the pittas
