These raspberry love balls are a perfect bite-sized treat, packed with the tangy sweetness of raspberries, the creaminess of cashews, and the richness of dark chocolate. They are super easy to make and naturally sweetened with maple syrup—an absolute delight!
Add the cashews, desiccated coconut, maple syrup, vanilla extract, and salt to a food processor. Blend for 30–60 seconds until it starts to combine.
Add the frozen raspberries and blend for another 30–60 seconds until the mixture turns a vibrant pink and comes together into a sticky dough.
Shape & Freeze:
Scoop out small amounts of the mixture (approx. 1 tbsp per ball) and roll them into bite-sized balls. Place them on a baking tray lined with parchment paper and freeze for 30 minutes until firm.
Melt the Chocolate:
Break the dark chocolate into small pieces and melt it in a heatproof bowl over a bain-marie (water bath) or in the microwave in 20-second bursts, stirring in between.
Coat the Balls in Chocolate:
Once firm, take the raspberry balls from the freezer. Using a fork or a skewer, dip each ball into the melted chocolate, ensuring they are fully coated. Let excess chocolate drip off before placing them back onto the parchment paper.
Set & Enjoy!

Tried them for valentines dessert. They were very enjoyable but half my chocolate burnt in the microwave so only half ended up coated they were still nice though!
This sounds great. Would love to try but I don’t know what desiccated coconut is ? Translater says: dried coconut. So does that mean flakes? Help please. Greetings from Germany
Great question! Desiccated coconut is finely grated, dried coconut—much smaller than flakes but not quite as fine as coconut flour. It has a light, dry texture and works well in baking. Hope that helps! 😊✨💚
Just made these for our monthly “plant luck.” Food processor can only handle one batch at a time. I also had to pop the uncoated truffles back into freezer halfway through. Each batch makes about 40 truffles, each 1 Tablespoon. So maybe only take 20 out at a time. Small Cookie scoop with release worked great for hands-free non-messy forming. I also used a fork to drop into the chocolate and roll to cover, then a sharp skewer to remove. These are nothing less than divine!!
If you are not well versed in coating stuff in chocolate – don’t bother. It’s not that easy. Ypu really need to temoer chocolate for the desired result. I spent a fortune on the ingredients and I’m not impressed tbh.
