We went super out there with this one, basil pesto pasta in 5 minutes means we substituted out whole wheat pasta for wholewheat noodles to keep the time down. This dish is so easy and tasty it’s a must try!! 

INGREDIENTS

  • 300g Wholewheat noodles
  • 50g Basil
  • Juice of 1/2 a lime
  • 1 teaspoon of Salt
  • 100g Roasted Cashews
  • 3 cloves of Garlic
  • 200ml Sunflower oil

Optional

  • Pinch of Chilli Flakes/ Pinch of Peppercorns

INSTRUCTIONS

  • Set aside the water to use for the noodles
  • Add all the ingredients (basil, juice of half a lime, 2 tsp salt, roasted cashew nuts, garlic, sunflower oil) and blitz for 30 seconds
  • Add the noodles to the water with a tsp of salt and bring to the boil
  • When cooked sieve and add to the pan / mixing bowl. Add the pesto to the noodles and mix thoroughly
  • Pimp your noodles with some chill flakes
