We went super out there with this one, basil pesto pasta in 5 minutes means we substituted out whole wheat pasta for wholewheat noodles to keep the time down. This dish is so easy and tasty it’s a must try!!
INGREDIENTS
- 300g Wholewheat noodles
- 50g Basil
- Juice of 1/2 a lime
- 1 teaspoon of Salt
- 100g Roasted Cashews
- 3 cloves of Garlic
- 200ml Sunflower oil
Optional
- Pinch of Chilli Flakes/ Pinch of Peppercorns
INSTRUCTIONS
- Set aside the water to use for the noodles
- Add all the ingredients (basil, juice of half a lime, 2 tsp salt, roasted cashew nuts, garlic, sunflower oil) and blitz for 30 seconds
- Add the noodles to the water with a tsp of salt and bring to the boil
- When cooked sieve and add to the pan / mixing bowl. Add the pesto to the noodles and mix thoroughly
- Pimp your noodles with some chill flakes
