Potato & Leek Soup

We teamed up with the beautiful Melanie Murphy to make Potato and Leek soup. This soup is a cornerstone of the Irish winter diet.

  • 2 medium leeks
  • 4 large potatoes
  • ½ an onion
  • 3 cloves of garlic
  • 2 litres of veg stock


  • Peel and finely chop the onion and garlic. Chop the leek and potatoes.
  • Put a large saucepan/pot on a high heat. Add 2 tbsp oil.
  • Add the onion and garlic to the pan and cook for 3 minutes stirring regularly.
  • Add the leek and potatoes and stir well and cook for a minute.
  • Add 2 litres of vegetable stock
  • Bring to the boil or until potatoes are soft
  • Blend with a hand blender.
  • Taste and season with salt and pepper to your taste
  • Enjoy with a nice slice of bread!
