Here’s another instalment for our 5 minute dinner playlist, Vegan Tacos, this dish is super easy and could even be done by one person in 5 Minutes, we added some of our vegan nacho cheese to the top to make them next level!

Ingredients
For The ‘Meat’
 1 tbsp olive oil
 2 cloves garlic
 ½ a red chilli
 100 g oyster mushrooms
 4 tbsp tamari
 1 tbsp maple syrup
 2 g tins red kidney beans (drained & rinsed)
 1 yellow pepper
 A pinch of salt
For The Salsa
 1 red onion
 15 cherry tomatoes
 Juice of one lime
 A generous pinch of salt
 15 g coriander
 A ripe avocado
 ½ tsp ground cumin
To Serve
 Taco shells
 Vegan nacho cheese (optional)

Instructions

First, make your taco ‘meat’. Heat your oil in a frying pan on a high heat.

Finely chop garlic and chili and add these to the pan.

Roughly chop your mushrooms and add them to the pan, along with the tamari and maple syrup.

Add your beans, to the pan and mix.

Roughly chop your red and yellow peppers and add these to the pan, mix and fry for 2 minutes.

Meanwhile, make your salsa. Finely chop your red onion, halve your cherry tomatoes and, after removing the skin and core, slice your avocado. Add these to a bowl along with the rest of the ingredients for your salsa, and mash with a fork.

Once your mushrooms are cooked, add to a taco shell, top with your salsa and some vegan nacho cheese to take these tacos to the next level!
