Dave was at a friends birthday party recently and he was introduced to how easy vegan samosas are to make. Next thing you know he’s having them for lunch every second day so we decided to share them with you.

Ingredients
Potato & Pea filling
 400 g potatoes
 2 cloves of garlic finely chopped
 2 handfuls of peas
 1 red chilli or 1 tsp chilli flakes
 ½ salt
 pinch of black pepper
 2 tsp curry powder
 ½ tsp ground ginger
 1 tsp ground cumin
 1 ½ tbsp oil
Filo pastry
 1 tbsp Dusting of sesame seeds
 1 pack of filo pastry
 2 tbsp oil for brushing pastry

Instructions

Preheat your oven to 200 degrees Celsius

Boil the potatoes until cooked through and a knife pierces them easily but not falling apart, drain them and put aside in a bowl

Add the garlic, peas, chilli, salt, black pepper, curry powder, ground ginger and cumin to the potatoes.

Mash it all together with the oil

For each two samosas, make sure to cut your filo pastry into a large square and half into triangle shapes for each samosa

Take a small handful of the mixture and place in the centre of the triangle

Fold over the pastry sheet to make a triangle shape and brush oil all over your samosa, dust sesame seeds over

Bake in oven for about 10-15 minutes until golden

Leave to cool
