Here’s our super tasty Spanish Roasted Vegetable Paella that serves 6. We used roasted veg and herbs in place of seafood and served it with short grain brown rice to keep your heart smiling. Ingredients
500gShort grain brown rice
1.20lvegetable stock
1tspsmoked paprika
1tspof mixed herbs
1tspsalt & pepper each
1tspturmeric
5clovesof garlic
2red onions
1carrot
1red, yellow & green pepper
1courgette
400mltins of chopped tomatoes
4tspred wine
2tsptamari
1 ½tbspof honey
Juice of 1 lemon
100gfresh green beans
Parsley to garnish
Instructions
Bring the rice to the boil with the vegetable stock and 1 tsp of turmeric
Chop the onion and garlic and cook until soft in some oil or water
Grate the carrot and add to the onions & garlic along with some salt
Chop peppers and courgette and add to the pot
Next add chopped tomatoes, red wine, tamari and honey
Season with mixed herbs, smoked paprika, salt and black pepper
Leave to stew for 20 minutes, stirring occasionally
Squeeze in the lemon and add the fine beans
Garnish with chopped parsley, olives and cashew nuts and horse it into you!
