Dave was at a friends birthday party recently and he was introduced to how easy vegan samosas are to make. Next thing you know he’s having them for lunch every second day so we decided to share them with you. Variety is the spice of life.


  • 400g potatoes
  • 2 cloves of garlic finely chopped
  • 2 handfuls of peas
  • 1 red chilli/ 1 tsp chilli flakes
  • 1/2 tsp salt
  •  pinch of black pepper
  • 2 tsp curry powder
  • 1/2 tsp ground ginger
  • 1 tsp ground cumin
  • 1 1/2 tbsp oil
  • Dusting of sesame seeds
  • 1 pack of filo pastry


  • Preheat your oven to 200 degrees Celsius
  • Boil the potatoes and put in a bowl
  • Add the garlic, peas, chilli, salt, black pepper, curry powder, ground ginger and cumin
  • Mash it all together with the oil
  • For each two samosas, make sure to cut your filo pastry into a large square and half into triangle shapes for each samosa
  • Take a small handful of the mixture and place in the centre of the triangle
  • Fold over the pastry sheet to make a triangle shape and brush oil all over your samosa, dust sesame seeds over
  • Bake in oven for about 10-15 minutes until golden
  • Leave to cool
